The classic margarita is a very simple cocktail with loads of refreshing flavor, and balances the smokey notes of a good tequila with the squeaky clean sweetness and acidity of the limes and triple sec. Use fresh lime juice whenever possible, and in a pinch, high quality bottled lime juice. For two cocktails you will need to juice about 4 limes.
1 shot is equivalent to 1 1/2 ounces
The Classic for Two
2 shots fresh lime juice (no substitutions)
2 shots of good silver tequila Anejo or reposado can also be used.
2 ounces triple sec
Margarita salt or Kosher salt for the rim (I use Kosher salt)
Fill two martini glasses with ice. Using a cocktail shaker filled with ice, add all ingredients leaving out the salt. Shake until well blended. Dump the ice out of the glasses. Wet the rims of the glasses with lime juice, I like to use one of the limes used for juice. Garnish the rim of a chilled martini glass with salt and lime wedges. Pour the cocktail through a strainer into the glasses and enjoy!
